Taking a London institution to New York.
Robin Birley Holdings
Robin Birley Holdings is behind some of London’s most established private members’ clubs, including 5 Hertford Street and Oswald’s. In 2025, the group took its distinctive approach to hospitality overseas for the first time, with the opening of Maxime’s in New York.
We joined Robin Birley Holdings as Project Director, three months ahead of the launch of Maxime’s New York. At that stage, the vision was established and the building was well underway. The focus was on bringing everything together; taking a complex project with many different creative and operational workstreams and getting it ready to open.
The role sat across interior design, construction, operations and guest experience, working closely with internal teams and external partners to make sure the many individual decisions being made in the final months felt part of one coherent whole.
Following the opening of Maxime’s, our work with the group continued on Birley Bakery New York, supporting the launch of the London bakery concept in Manhattan and bringing its established identity and experience to a new audience.
Back in London, we also worked on The Carrington, Robin Birley Holdings’ new Mayfair restaurant and bar, supporting the project as it moved through development towards launch.
Across the three projects, our role was ultimately one of connection: working between creative ambition and practical delivery, keeping sight of the original idea while managing the hundreds of decisions required to turn it into a functioning hospitality business.
Role: Project Director (Mat Cover) - Fixed Term Contract.
